I decided to do a very simple meal this week so I decided to do a quick breakfast of scrambled egg on top of a roti. Like the meal, the ingredients I used were fast and simple. I quickly scrambled the egg in a pan with about 1 tablespoon of olive oil.
After the egg was scrambled, I placed the egg in between two buttered rotis to make a breakfast sandwich that I was able to foil wrap and take to class.
Although this was a very basic recipe that did not involve many ingredients or follow a specific recipe, I really enjoyed the final roti sandwich. In the future when I have more time, I would like to add some cayenne pepper, cumin, and chili powder to the egg to enhance the flavor of the scrambled egg.
