Wine Braised Sirloin with Mushrooms


I based this meal off of a recipe from "Nourish Kitchen" for Braised Steak with Red Wine and Rosemary, but I altered it a bit to suit my time needs.

Ingredients:
Grass-fed Beef Steak
1 QT Vegetable stock
3 C Cabernet Sauvignon
3 C whole mushrooms
3 Sprigs fresh Rosemary
1 Med White Onion
4 Cloves of garlic
1/2 C Coconut Oil
1 Carrot
1 Green Pepper
3 Celery Stocks
1/4 C Balsamic Vinegar

This was probably the recipe I felt least comfortable doing, I've never technically braised anything before and it seemed rather time consuming, yet I understand the purpose of the technique. The flavor is outstanding. My children preferred the seared steak pieces I cooked that were left over after I used what I wanted to for this recipe. I also added a lot of mushrooms because I wanted to eat more mushrooms than steak and my husband really likes a meaty meal.

I pan seared the onions and garlic in the coconut oil first to flavor it, then seared the steak before putting it into the roasting pan. My kitchen is under construction, so I am limited on supplies due to their dispersion around the house. I honestly don't know where a lot of things are.

Lastly for the searing, I browned the tops of the mushrooms for the carmelization. Once everything had a nice crust, and the flavors were released, it was all transferred to the pan with a QT of vegetable stock.

I de-glazed the skillet with the wine, and added the vinegar, then let that simmer for a few minutes. I added it over the top of the contents of the roasting pan, added the rosemary on top and popped it into a 300 degree oven for 2 hours, covered.

I served this dish with white rice, the house smelled amazing, and the family was fed.

I know I will caramelize things in the future, but I don't know that i will follow this processes regularly, it is long and time consuming. I also found that without serving the meat with the juice in the pan, the beef was dry, and made my kids not enjoy it as much(and my son Brian loves meat more than most things on his plate).
