Week 1 Cooking Assignment
Dish: Chicken Quesadillas
Recipe used: I made it up. I used tortillas, one onion, one tomato, chicken breast, avocado, olive oil, salt, and pepper.
Reflection: This week's technique was dicing, so I wanted to incorporate a lot of dicing into the dish. This led me to use the onion and the tomato because they taste great diced. I chose not to follow a recipe because I had a pretty clear idea of what I wanted for dinner. It had been awhile since I had a quesadilla and I already had chicken in the fridge. I really enjoyed the dish and thought that the avocado on the side was a great touch to bring a different texture onto the plate. In hindsight I would have made guacamole if I had more time. I also could have substituted the chicken for red meat if I felt like eating something more substantial or excluded meat entirely for my vegan friends. Making quesadillas was relatively easy and could become something I make quite often.
