The "theme" of my final meal is vegetarian. It is nutritionally balanced and contains 3 components including salad, main, and dessert.

Besides the seasoner such as salt, black pepper, olive oil, vinegar, and red pepper, I need to buy greens mix, English cucumber, red onion, nuts, cauliflower, garlic, oats, bananas, milk, and honey.

1). Salad

The recipe source is https://www.gimmesomeoven.com/everyday-salad-recipe/

Ingredients:
Salad ingredients:
5 ounces greens mix (or whatever greens you have on hand)
1 English cucumber, very thinly sliced
half of a red onion, peeled and very thinly sliced
1/2 cup nuts(2 oz) you have on hand

Salad dressing ingredients:
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vinegar

Steps to make it:
1. Prepare the salad dressing: To make the salad dressing recipe, just whisk all of the ingredients together in a bowl until combined.
2. Toss all of your salad ingredients together: Combine them in a large bowl, drizzle evenly with the dressing, then toss lightly until combined.
3. And…serve!  And enjoy!  :)

2). Main--Stir-Fry Cauliflower

The recipe source is https://www.foodnetwork.com/recipes/food-network-kitchen/roasted-cauliflower-recipe-1945072

Ingredients:
1/2 head cauliflower (about 1 pounds), cut into bite-size florets
5 cloves garlic, roughly chopped
1/4 cup olive oil
1/4 teaspoon chili oil
2 teaspoons salt

Steps to make it:
1. Break up the cauliflower into small florets.
2. Heat a large, heavy skillet over medium-high to high heat. Add the oil, then the cauliflower and garlic. Stir the cauliflower around in the pan, allowing it to get very brown in some parts. Cook for 3 minutes, then turn the heat to low.
3. Add the chili oil and salt, stir until incorporated.
4. Serve hot in a bowl and eat with rice.

3). Dessert--Banana Baked Oatmeal

The recipe source is https://www.livewellbakeoften.com/blueberry-banana-baked-oatmeal/

Ingredients:
2 and 1/4 cups oats
1 cup ripe mashed bananas
3/4 cup milk
1/4 cup honey
1/4 cup nuts

Steps to make it:
1. Preheat oven to 350°F.
2. In a bowl, mix together the oats, mashed banana, milk, honey, and nuts until fully combined.
3. Bake at 350°F for 30-40 minutes or until the top is set and lightly golden brown.
4. Remove from the oven and allow to cool for 10-15 minutes.
5. Enjoy it!

The meal is nutritionally balanced. It contains almost all the nutrients people need, such as fiber, carbohydrates, healthy fats, etc. And the ingredients are simple and healthy.

For salad, both of the ingredients are healthy. Vegetables contain a lot of water and fiber, which can promote health and enhance immunity. For cauliflower, it is a quick and healthy dish. It is full of fiber, and adds more plant-based goodness to this dish. The match of a little chili oil is flavorful. You can also add some lime juice or vinegar. I make this quick and healthy dish at least twice every weeks and eat it with rice. For the dessert, oats are rich in dietary fiber and can help reduce cholesterol. One of my favorite things about this recipe is that it’s sweetened naturally with bananas and honey. There’s nothing better than enjoying a healthy dessert. Baked oatmeal has kind of a soft and chewy texture. I love to eat it with some Greek yogurt.  It’s also great with some fresh fruit on top.
