Final Meal

For my final meal project I chose to cook a vegetarian meal composed of recipes from the Georgia O'Keeffe cook book. I chose to make a main course of potatoes in curry, a side dish of green beans, and walnut cookie for desert. I chose to make a meal from the Georgia O'Keeffe cook book because I really admire her as an artist and I really admire her for the healthy lifestyle choices she made that allowed her to be ahead of her time and lead a long happy life. I also really admire and want to strive towards vegetarianism, so that's why I chose a meatless main dish. Obtaining the ingredients for my recipe was fairly easy. I already had most of the ingredients that were necessary for the dish so I just had to buy a couple of items that I wouldn't regularly have like a pound of potatoes, green beans, and masala. The nutritional completeness of my meal was a little lacking in the portion department, but otherwise it was fairly complete. I had healthy oils, fats, vegetables, minimus amounts of protein, starch, and healthy sugars.

The process was as follows:

First I cut about two pounds of potatoes into small bite sized chunks. Then I melted the butter, and added minced onions, spices, lemon juice and masala in the pan. After these ingredients were well combined I mixed in the cut potatoes. I then let the curry sit for about 15 minutes until the potatoes were tender. I really liked the curry, it was my first time making curry and I defiantly want to again.













While the potatoes were cooking I cooked the green beams and mixed up a salad dressing from the cook book. The dressing consisted of lemon juice, olive oil, pepper, and garlic. When this was complete I put it over the green beans and mixed sliced almonds in with them to add crunch and protein. I love green beans but I hated the salad dressing that I made. In the future I would just use garlic salt and olive oil instead.
Finally I prepared the walnut cookies. The cookies consisted mainly of fats and flour, along with sugar and walnuts. These are very simple and very very good. They are fatty and indulgent. My family and I really enjoyed them and id defiantly want to make them again.
