Final meal

The menu theme of my final meal is "Protein". The first one is the beef. The lean beef can contains more than 22 grams of protein per 3-ounce. The bean sprouts also a good source of protein. The other protein sources I choose are egg and tofu. 1 large egg contains 6 grams of protein and 1 cup of tofu can contain 20 grams of protein.

Poached Sliced Beef in Hot Chili Oil
Ingredients:

  • Sliced beef
  • Minced Garlic
  • Green onion
  • Dried red chilies
  • Pepper powder
  • Chili bean sauce
  • Salt
  • Starch
  • Soy sauce
  • Ginger
  • Chicken essence
  • Vegetable oil
  • Bean sprouts
  • Cilantro
Steps:

  1. Add salt, soy sauce, chicken essence, pepper powder, and starch into the beef. 
  2. Bean sprouts blanched and put on the bottom of the bowl. 
  3. Put garlic, green onion, ginger, dried red chilies, chili bean sauce into the wok after the oil is hot. 
  4. Add water, salt, and chicken essence into the wok. 
  5. After the water boiled, put sliced beef into the wok. 
  6. After the beef is well done, put all things on the top of the bean sprouts. 
  7. Put sliced cilantro on the top.
Mapo Tofu
Ingredients:

  • Tofu
  • Ground Beef 
  • Chili bean sauce
  • Chili powder
  • Pepper powder
  • Garlic
  • Green onion
  • Salt
  • Vegetable oil
  • Starch
Steps:


  1. Put oil, and put ground beef and salt into the wok after the oil is hot. 
  2. After the beef changes color, pour the beef into the bowl.
  3. Add oil into the wok and put chili bean sauce, chili powder, garlic, and pepper powder.
  4. Put tofu into the wok, cook a few minutes.
  5. Put the beef and add starch.
  6. Pour everything into the plate and put the green onion on the top.



Custard
Ingredients:
  • Whole milk, one cup
  • 1 large egg
  • Sugar, 23g
  • salt, <1 g
Steps:
  1. Scald milk
  2. Beat egg with sugar and salt.
  3. Pour scalded milk into the mixture.
  4. Preheat oven to 350F.
  5. Set the custard cup in a Pyrex baker and fill the baker with water. 
  6. Put into the oven and cook for 40-50mins. 


In the final meal, the beef and tofu are spicy. So the bean sprouts on the bottom can help to reduce the spicy. Also, the last dessert custard is made from milk. The sweet taste can make the meal won't be too spicy. Both spicy dishes come from Sichuan, China. They are the traditional dishes of Sichuan. The most of traditional dishes from Sichuan is spicy. Minnesota has a lot of Sichuan restaurants like Legendary Spice, Little Szechuan, and Lao Szechuan. 
The last one, the custard is not the traditional Chinese dessert. This is the second time I made this and the first time was on my Food Science lab class. I 'm not good at dessert and baking. So I pick the easiest one. It made with milk and egg so it is pretty healthy. But I think to reduce the sugar content could be healthier for this one.
