Final Meal- "Vegetarian Breakfast"

One of the biggest things I got out of this class is that you do not need to eat meat to have a high protein meal, so for that reason I decided to create a completely vegetarian breakfast that was also high in protein. My three components were a simple three fruit salad, an egg scramble, and protein pancakes. I do not have any specific recipes I sourced from; I improvised everything using knowledge I gained in this class.
Ingredients
Fruit Salad
-2 medium apples
-2 kiwis
-15 raspberries
Egg Scramble
-1 potato
-1 jalapeno
-5 eggs
-oil
-salt and pepper
-cheese
-taco sauce
Protein Pancakes
-1 cup pancake mix (I used Kodiak Power Cakes)
-1 cup milk (I used Silk protein nut milk)
-1 egg

The Process
I began with course 1: the fruit salad. for this I simply cut the apples and kiwis into pieces that were roughly the same size as the raspberries and then tossed them together to form a nice homogenized mixture.
For course 2, I began by heating a skillet to medium heat. While that was heating, I chopped the jalapeño into roughly 1cm pieces. Then I cubed the potato into 1 inch pieces. By then the skillet was heated so I oiled it and added the potatoes to begin cooking. While the potatoes were cooking I whisked together 5 eggs and set them aside.
When the potatoes began to get slightly browned I added the jalapeño pieces and more oil and cooked that for another few minutes. At that point I poured the scrambled eggs over the vegetables and mixed it all together while the eggs cooked.
When the eggs were cooked I salted and peppered the scramble and put it into a bowl with 3oz of shredded cheese and a little bit of taco sauce.
My third course was very simple; all I had to do was combine the ingredients in a mixing bowl and beat them together, taking care to not overbeat. When the batter was prepared I poured it onto a heated and oiled skillet, 1/3 batch at a time, and heated until bubbles began to form. At this point I flipped them and cooked them for another 2-3 minutes until both sides were golden brown. This mix was so tasty I enjoyed the pancakes without any syrup or toppings at all.
Discussion
Overall I was very pleased with this meal. I did all my shopping at the Target Express, and as a result the fruit that I was able to pick from was less than ideal. This is why I only had three sort of strange fruit salad ingredients. That being said, the three ingredients all went very well together and the three fruits were also my three favorite fruits, so for those reasons I was quite happy with this simple mixture.
If I could have changed one thing about the scramble, it would have been that I made more; it was very good. I only bought one jalapeño and after adding it I thought I had messed up and that it would be way too spicy, but it actually was almost not enough and that is why I decided too add a little taco sauce. I cooked the potatoes perfectly; they were crispy on the outside and slightly mushy on the inside, which went perfectly with the texture of the eggs. Going along with my wishes of having made more, in the future I will definitely add more potato as well and maybe some other vegetables.
As I alluded to before the pancakes were unbelievably good. I saw this mix at the store when I was going to buy flour and baking powder to make the pancakes from scratch, but since I was taking a high protein vegetarian approach I had to get these because they fit the theme so well. I also bought syrup and was planning on dousing the pancakes in it because I thought that pancakes with that much protein would taste like bricks, but they were so tasty I really could not believe it; I will absolutely be buying and making more of those in the future.
As I said before I am very happy with how this meal turned out, and am very proud of myself for creating a well balanced and protein rich meal using only vegetarian sources.
