Final Meal- One Pan Stuffed Chicken Marsala, Bruschetta, Tiramisu - Italian Theme


One Pan Stuffed Chicken Marsala Ingredients:
Marsala Wine
Olive Oil
Plain Greek Yogurt
Organic Chicken Breast
Yellow Onion
Sun dried tomatoes
Garlic
Mushrooms
Green onions
Mozzarella Cheese
Parmesan Cheese
Smoked Gouda
Heavy Cream
Salt and Pepper to taste

Instructions:
1. Preheating the oven to 375 degrees, prepare the chicken breasts by slicing in a butterfly fashion to prepare them for stuffing.
2. Saute the chopped yellow onion, garlic, olive oil, and mushrooms in a high sided, oven safe pan, until translucent.
3. While this is cooking, combine the smoked Gouda, Mozzarella, bread crumbs, Chopped green onions, sun-dried tomatoes, salt and pepper in a large mixing bowl.
4. Once the vegetables are done sauteing, de-glaze the pan by adding 1.5 cups of Marsala wine and allow it to come to a simmer. Adding small amounts of heavy cream at a time, bring the sauce to the desired consistency. A thinner sauce is ok, as this will cook in the oven and thicken.
5. As the sauce is cooking I stuffed a half a cup of the cheese mixture into the chicken and folded it closed, not using a toothpick as recommended in the recipe.
5. Removing the sauce from the pan and heat a few Tablespoons of oil to brown the stuffed chicken on both sides.
6. Once browned, cover the chicken with the sauce, and I sprinkled the remaining mixture of cheeses to the top. Place in the oven and cook thoroughly through. No cover required. This took about 25-30 minutes.


Bruschetta Ingredients:

Ciabatta bread- sliced

Olive oil

Balsamic Vinegar

Fresh Tomato - chop small

Garlic - chop fine

Fresh basil - thinly julienne

Salt and Pepper to taste

Bruschetta Instructions: Basically the easiest appetizer!
1. Combine the tomato, garlic, basil, salt and pepper in an appropriately sized mixing bowl.
2. Toast sliced ciabatta bread in a 400 degree oven until slightly browned, but still tender.
3. Spoon tomato mixture onto warm bread and drizzle balsamic vinegar over the top as much as desired.
 Finished Dish

Tiramisu Ingredients:
Amaretto - or any liquor if so desired, but not necessary
Lady Fingers
Mascarpone Cheese
3 eggs
Espresso - brewed cold
Pure cane sugar
Unsweetened cocoa powder

Instructions:

1. Separate egg yolks and whites into different bowls, whipping whites into soft peaks.
2. Mix yolks together until foamy and lightened in color, add sugar and mix well.
3. combine yolk mixture and mascarpone cheese until blended and fold in egg whites being careful not to over mix and loose texture.
4. Spread one layer of the cheese mixture onto the bottom of the final dish in preparation for the cookies
5. Combine espresso and desired amount of amaretto, if any, and dunk the lady finger cookies in the liquid to saturate, not too long. Place each saturated cookie in the dish in a linear fashion and cover with another layer of the cheese mixture.
6. Repeat this combination until the dish is filled with layers of the two mixtures, then dust with an unsweetened cocoa powder.

I really enjoyed making all three of these dishes, but my children really only liked the stuffed chicken, and mainly for its cheese. Don't worry, I also roasted some cauliflower for the family to eat, which I didn't include because it was a fourth element. There were many more steps to the chicken dish than I was prepared for and it was challenging for me to complete with my limited space. In retrospect I could have chosen a less complicated dish.
The Bruschetta was honestly very refreshing and delightful, again not for the children, but I would eat that as a meal any day of the week. The process is simple and the ingredients are relatively low cost making this dish ideal for parties or a general snack. I suppose the vinegar is an acquired taste, and could be left out, but there are plenty of recipes out there have many substitutions making this dish really suitable for anybody. The balance of my three dishes in terms of nutrition comes in with the small amounts of vegetables that add up. I also used a pure cane sugar, unrefined instead of white sugar for the desert.
