Wk10 -- Spicy Cauliflower Stir-Fry
This week I made Spicy Cauliflower Stir-Fry.

Ingredients:
1 head cauliflower
2 cloves garlic, minced
2 teaspoons vegetable oil
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon hot sauce
Steps to make it:
1. Break up the cauliflower into large florets, then use your hands to break into very small florets.
2. Heat a large, heavy skillet over medium-high to high heat. Add the oil, then the cauliflower and garlic. Stir the cauliflower around in the pan, allowing it to get very brown in some parts. Cook for 3 minutes, then turn the heat to low.
3. Add the soy sauce and vinegar. Stir and allow to cook for 1 minute, then add the hot sauce and stir until incorporated.
4. Serve hot in a bowl and eat with rice.
I love this recipe because it’s simple to make with ingredients. This dish would be perfect as a quick lunch at home and especially ideal as an easy weeknight meal when you don’t have a lot of time to get something on the table. You can finish it in 15 minutes including 5 minutes of preparation and 10 minutes of cooking. It is full of fiber, and adds more plant-based goodness to this dish. The match of vinegar and hot sauce is vibrant and flavorful. You can also use lime juice to replace vinegar. I make this quick and healthy dish at least twice every weeks and eat it with rice.

How I incorporated the weekly technique:
When I make this dish, I need to cut garlic and cauliflower. And I learned how to use knives to cut different shapes and sizes of food in class. Take garlic for example, I put it on the cutting board, hold it in the left hand, and cut vertically in the right hand, while the left hand is back with the right hand. The technique of cutting is that using a sawing motion when cutting through foods. Keep the tip of the knife on the surface of the cutting board and lift the handle up and down with a repetitive front-to-back sawing motion.
