Wk10 Rice pudding

This week I decided to make rice pudding, I found the recipe on a website called Yummly. The recipe and ingredients are as follows:

2 cups of cooked white rice
2 1/2 cups of milk
1/3 cup of sugar
1/4 teaspoon of salt
2 eggs
2 tablespoons of butter
1 teaspoon of vanilla extract
1 teaspoon of nutmeg

In a medium saucepan, I combined the 2 cups of cooked rice, 2 cups of milk, the sugar, and the salt. Then I cooked them over medium heat for 15-20 minutes. After it thickened I combined the remaining 1/2 cup of milk, and a beaten egg. I cooked it for 2 more minutes, staring constantly. Then I removed the mixture from heat and added in the butter and vanilla.

Personal Comments/ Reflection:
Overall making the rice pudding went really well. I've made rice pudding before but it was primarily with my grandmother. She has an old family recipe that she uses every Christmas, and before I knew I was lactose intolerant, it was my favorite Christmas desert. It was one of the first deserts that she taught me how to make. The rice pudding that I made wasn't her recipe ( it was a lot simpler and less time consuming) but it still reminded me of the times she'd make it for me.
