Wildcard Week- Keto Pancakes

This week I decided to do a recipe for keto pancakes I found at https://jenniferbanz.com/protein-pancakes . This recipe fits into a technique we learned by incorporating animal protein/eggs by using fresh eggs as well as whey protein powder.
Ingredients:
- 2 eggs
- 2 scoops whey protein powder
- 1 teaspoon baking powder
- 6 TBSP almond milk
- cooking spray/butter
- chocolate chips (optional)

Process:
I began by putting the pan on the stove to heat up while I prepared the batter. The batter was very simple to make as all you do is combine the ingredients and whisk them together. I also added chocolate chips for some sweetness because I would not be using syrup.
Once the batter was ready and the pan was hot I greased it up and poured the batter on using a 1/3 cup measuring cup as the recipe creator suggested.
Once they began to bubble I flipped them and then cooked the other side until it was golden brown. I then removed them from the heat, let them cool briefly, and enjoyed.

Discussion:
Overall I was very pleased with how this recipe turned out. As there was no flour I expected the texture to be a little off, but it was surprisingly similar to regular pancakes. If I could make a modification it would be to add some peanut butter or bananas or more chocolate chips to add a little more flavor, as they were a little bland even with the protein powder and chocolate chips I did have in there. I also would have used a little more lubrication on the pan because there was a little bit of sticking. As I said before I did like this recipe and for someone on a ketogenic diet this is a game changer. For me however I do not see myself making this again as regular pancakes are better in my opinion. That being said I like the idea of protein pancakes so I will be investigating other recipes similar to these.
