Whole grains


This week's assignment was whole grains so I incorporated that using whole wheat flour when making my whole wheat banana chocolate chip bread. 
I got my recipe from Asassyspoon.com
3 frozen overripe bananas
1 stick of unsalted butter
1 large egg
2 cups all-purpose flour (I used the whole wheat flour)
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup dark chocolate chips (I used a chopped up chocolate bar because that's what I had)

I love making banana chocolate chip bread. I usually just make it with all-purpose flour but used the whole wheat instead to make it ever so slightly more healthy. I couldn’t follow the recipe exactly because I didn’t have baking powder or baking soda so I looked online for a substitution and found that supposedly yogurt is a good replacement for the baking soda and powder. I probably didn’t do the right proportions of yogurt because when it came out it was almost bread pudding-like. As it cooled it solidified more and was more bread-like but still a very tight structure inside. Also, the chocolate was not very evenly distributed so I probably could have cut it up into smaller pieces. Not one of my best bananas bread but it was still really yummy.
