This week for culture I chose to make fajitas. Fajitas are native to Mexico and incorporate spices like cumin. One thing that I thought was interesting when I was researching the history of fajitas is that they started as a waste meal as they were made with scraps of meat that were typically thrown away. This week however, I chose to make vegetarian fajitas using tempeh!
As per usual, I didn't follow a recipe to make my meal. To start I chopped my veggies and tempeh up and heated olive oil and cumin seeds in a pan. Then I combined everything and cooked it until it was done.

I really enjoyed having fajitas for something different! My mom would make them as a quick meal when I was growing up and having them this week reminded me of that! Some things that I would change for next time is to have all the extra toppings on hand. While the meal was good as it was, I would have loved it even more having some cilantro, salsa, sour cream and cheese with the tempeh and vegetables. Another modification that I would make is to marinade the tempeh before cooking it. I think that by marinating the tempeh it would give the recipe more depth than it currently has. Also if I added some molasses or brown sugar to the marinade it would help to crisp up the tempeh which would help contribute a variety of textures to the meal!
