Week 9


For culture this week I represented the American Farmer and a typical meal held by them for a nicer meal. I prepared two racks of ribs along with mashed potatoes and a green bean hot dish. The main part of the meal was the ribs and for preparing them I first mixed up a bunch of seasonings including salt, pepper, chili powder, season salt, brown sugar, Italian seasoning, olive oil, apple cider vinegar, garlic powder, onion powder and then chicken stock. Then I put the ribs in the oven and covered them with tin foil and baked them at 250 for 2.5 hours. After this I took the ribs out and put the ribs on a hot charcoal grill for 7 minutes per side. The liquids from the oven that are left in the pan I poured into a sauce pan and then added a quarter cup of barbecue sauce and then boiled it down until the mixture was thickened to a sauce texture. After the ribs were done on the grill I then took them off and cut them up to each individual rib then added the sauce to them in a tray and then mixed them well until the ribs were covered and then put them back on the grill for 20 minutes in the tray to smoke and continue to cook and caramelize on the grill. This was my own recipe that was thrown together and turned out fabulously.
