Week 9 - Chicken and Ginger Congee (Porridge)
Ingredients
- Rice
- Chicken
- Ginger
-White Pepper
-Soy Sauce
This week I made Chicken and Ginger Porridge. The process to make this dish is to mince some ginger and cut the rest into small pieces, put rice into a pot(wash it if you like), add chicken, and finally add water. After putting all your ingredients in the pot and adding water, bring it to a boil, then drop the heat and let it simmer at least until the rice is cooked, but however you like your porridge will change how long you allow it to simmer. If you like a soupy porridge you should take it off sooner rather than later, but if you prefer it to be thick and goopy like I do then you'll let it sit for a while longer. I love making this dish because of how simple it is, but also because it reminds me of my childhood, culture, and family. My dad always made this growing up because his parents made this when he was a kid. It's a very simple dish that has been in my family since people could simmer rice in a container for a long period of time. Congee is just a simple dish that reminds me and most likely a lot of other people of asian descent of home.
