Instant Pot Spaghetti and Meatballs

1 lb. frozen cooked meatballs
4 cloves garlic, minced
Salt and freshly ground black pepper
12 oz. dry spaghetti noodles
1.5 teaspoons basil leaves
24 oz. marinara sauce (https://www.delish.com/cooking/recipe-ideas/a24570093/marinara-sauce-recipe/)
1 (14.5 oz.) can petite diced tomatoes
2 2/3 cups warm water
Instructions

1. Break spaghetti noodles in half. Add about 1/6 into an even layer over meatballs, then add another 1/6 going the opposite direction into an even layer. Repeat this pattern with remaining noodles four times.

2. Add in marinara sauce, basil, tomatoes and water and season lightly with salt and pepper (don't stir).

3. Seal the lid of the Instant Pot, making sure the valve is set to "sealing." Press the "manual mode" button (or high pressure on other pressure cookers) and set to 7 minutes.
4. Once time is up, use the quick release method according to manufactures instructions (basically just stand back and flick the valve). Once sputtering stops open lid, remove basil and toss spaghetti with a fork.

5. Let rest two minutes (this will allow some of that extra liquid to soak in and the noodles to cook through). Enjoy!
This week I chose to do spaghetti and meatballs. While it is not traditionally Italian food, it was traditional food among Italian-American immigrants. Spaghetti and meatballs originated as a result of Italian immigration to the US from 1880 onwards, and meatballs were never added to spaghetti in Italy, but the immigrants made them with stale bread and ground meat because many were impoverished. I had gotten the idea to do this because I had a bunch of leftover homemade marinara sauce that I made (recipe linked in ingredients), and wanted to find an interesting recipe to use it for. I also have not used my Instant Pot as of late, which is a cooking appliance that I really enjoy using for its flexibility for cooking. I thought that overall the recipe went well, but there are a few things that I would change. The first thing would be to use different meatballs, since I just used the kind from Target, which is probably not of the highest quality. Another thing I would change would be to find an even better way to get the spaghetti to not stick to each other, since quite a lot of the spaghetti was stuck together after cooking. Overall, I was happy with the dish and it gave me a lot of food for the rest of the week.
