GUACAMOLE
You read that right, today I'm very excited to make some fresh guac. One of the best condiments ever created, guacamole is one of the few things considered a topping that I would consider eating straight with a spoon if it was good enough. I got this idea because I get to make it quite a bit while camping for work because it's part of our standard chicken fajita night, but I wanted to add even more too it than just salt and lime. Here we are. Guacamole is a Mexican dish that was created when Aztecs lived in the area. I figure it's quite obvious guacamole is a food from a different culture, but just wanted to give it some clout since it's a very americanized food these days.
Avocados
Diced Red Onion
Cilantro
Jalapenos
Lime Juice (lemon for me srrry)
Fine Sea Salt
Ground Cumin
Diced Tomatos
I started with dicing the onion and tomato into tiny little pieces. I'm not a tomato fan usually, but when I get around to Hispanic food, all bets are off. I turn into a monster and I'll eat almost anything set in front of me. Cilantro was also chopped and added into the stacking pile of future ingredients along with a healthy amount of jalapeno. Next I removed the pits from the avocado and scraped out the meat. The mashing process commenced and I turned the cado in a delicious looking paste. It was the moment we've all been waiting for. Salt. Boom. Onion. Check. Lemon(cuz I love the sweetness). Juice Added. Tomatoes. I'll allow it. Cilantro. Ayo. Jalapenos. Absolutely. Cumin. Lightly sprinkled. Mixing began and before long what was in front of me was nothing short of an absolute dream.
It's incredible you can pay so much for this stuff at restaurants to get extra when the ingredients are so cheap. A $3 input on ingredients gave me guac for so many occasions. Heck, I could even throw a party and give it away. How much do you think you'd spend at Chipotle asking for 50 little cups of that guac like a complete dummy? A lot of money, that's how much money. This was awesome. I approve. I will definitely be making more guacamole because it's a lifestyle.
