Recipe Name: Shrimp Burrito
Ingredient: Shrimp (8), Brown Rice (8 oz), Shredded Cheese, Lunch Meat, Large Tortilla, Salt, Oil
Steps:
1) Cook brown rice with 2 cups of water for 40 minutes.
2) Peel the shrimp. Dice the lunch meat into small cubes. (Complete step 2 while rice is being cooked)
3) After the rice is cooked, add cooking oil to a skillet. Add the shrimp into this skillet and heat the skillet.
4) Stir fry the shrimp until both sides of the shrimp are red. Add salt to the shrimp for flavor.
5) Add rice and lunch meat into the skillet and stir fry for another 5 minutes. Sprinkle some shredded cheese to the mixture at the end.
6) Remove the shrimp, rice, and lunch meat from skillet. Add cooking oil to the skillet, heat up the oil, and place a flour tortilla into the skillet to heat up.
7) Take the heated tortilla out. Wrap the rice/shrimp mixture with the tortilla.
Reflection:
I made this recipe this week to use up some of the items in my pantry. Cooking the brown rice took the longest period of time for this dish. However, I was doing other things while the rice was being cooked (just like two weeks ago). I already have the shrimp, lunch meat, and tortilla in my pantry, so I don't need to purchase as many groceries for this dish. One difficulty that's somewhat expected from this process is wrapping the burrito. It is a little difficult to wrap the burrito due to the amount of rice I have inside the tortilla. (This reminds me of Chiptole employees trying to wrap the insanely big burritos.) In order to wrap the burrito, I actually had to finish some of the rice so that there was less rice to be wrapped. In the end, the burrito comes out to be pretty tasty.
