15 BEAN SOUP
For this second budget assignment, I chose to make bean soup, basically because I love cooking soups and it just feels right for this cold weather. I had bought this package of 15 different types of dry beans a while ago, and I thought it'd be nice to try them. I actually tried to cook the recipe indicated in the package, named "Hurst's Hambeens 15 Bean Soup". A version for this recipe can be found in the following link: https://hurstbeans.com/recipes/instant-pot-vegetarian-15-bean-soup
Ingredients
- 20 oz 15 bean package
- 1 onion, diced
- 3 garlic cloves, minced
- 1 14.5 oz can Diced Tomatoes
- Mixed spices= garlic powder, chili powder, chili flakes, pepper, bay leaf, oregano, cumin, salt.
- Lemon juice, amount of choice
- Cilantro for flavor
- 1 carton of vegetable broth
Process

Once I served it in a bowl, I added some fresh cilantro and more lemon juice, since I like acid taste. It was very very delicious.
I honestly think it is a very nutritious recipe, easy, and cheap. In the end, I had a lot of soup so I stored some in glass containers and froze them, so I have them ready for another day. The original recipe is different from what I made. They don't use vegetable broth to cook the beans, but water. And they don't use as many spices.
My only complaint is that beans have different sizes, so when you boil them, there will be some that we'll be ready before others and that's a bummer. Eventually, you'll find some of them being broken into pieces. But overall, really worth it!
