Summary:
The major difference I found is that many of these things
aren’t available at the convenience store because they don’t tend to have great
whole food options. Anything that I did find was more expensive at the
convenience store. I wasn’t really surprised by this, because I knew grocery
stores are much better, not just for better food but for better prices. You pay
for convenience. I saved money by going through Target instead, though I didn’t
really find any discounts or anything. In addition, I had a lot of the necessary
ingredients in my pantry already so I focused on the things I didn’t have so I
saved money that way too.
Directions for turkey spaghetti zoodles
- Heat olive oil on medium heat in a medium skillet. Add turkey, green pepper (diced), minced garlic (1 Tbs), Italian seasoning (2 tsp), black pepper (1/2 tsp), salt (1/4 tsp), and red pepper flakes (1/4 tsp). Cook and stir, browning turkey for around 5 mins.
- Add baby spinach and marinara; cook and stir for another few minutes
- Stir zucchini noodles into the sauce (using a spiralizer or veggie peeler); cook and stir till noodles are al dente!
Reflection:
This one was meant to be a simple meal. I did accidentally get a pound of ground turkey instead of a pound and a quarter (a mistake I would not usually make). Since Target was out of zucchini I got frozen zucchini noodles instead. Then I accidentally poured the steam water in with the zucchini noodles and tried to boil it out. It still made a decent spaghetti, though it would have been better to wait longer on the spinach I think, but maybe that's just part of it.
