week 10: wildcard

For this week's dish, I had some extra time so I decided to make fettuccine with a tomato and basil sauce! It's a pretty basic dish so I didn't look up any recipes and just went with my instincts. My mom used to make pasta all the time when I was younger so this was super comforting!


ingredients
- fettuccine 
- diced tomatoes
- lightly dried basil
- 2 yellow onions
- 4 white mushrooms
- minced garlic
- salt
- pepper
- olive oil

recipe
- cook pasta until al dente, drain
- heat olive oil, add garlic and cook until fragrant
- add onions and mushrooms and cook until soft
- add diced tomatoes and bring to a boil, reduce heat and simmer until sauce is thick
- season the sauce with salt and pepper
- add pasta to the sauce and mix together
- add dried basil
- plate the pasta, sprinkle seasoning of choice!

Overall this was a pretty easy dish to make and I used techniques that we learned in class like making the tomato sauce and slicing things. Normally I'd add bacon or sausage to it but one I didn't have it in my fridge when I made it and two I'm trying to cut out processed meats in my diet. I would use fresh basil instead of lightly dried basil in the future though, as fresh basil has a more refreshing and sweet taste but if you only have lightly dried basil that works too! I also would've added some red pepper flakes but I also ran out of that so I used a little bit of taco seasoning to give it more flavor. It was pretty heavy though so I probably won't make it again for another while.
