For this week's home cooking blog post, I decided to make chili for a friendsgiving party. I did not use any specific recipe; rather, I went off of taste and some basic ingredients. For the ingredients, I used the following:
- Red, Green, and Yellow Bell Pepper
- Two Yellow Onion
- 1 Jalapeno Pepper
- 28 oz can of crushed tomatoes
- Garlic
- Red, black, and pinto beans
To start the chili, I sauteed the vegetables in a pot and then added the garlic once the onions had turned translucent.
I then proceeded to add the crushed tomatoes to the chili along with around 14 ounces of water. I then used the following spices to season the chili: Paprika, Cayenne Pepper, Chili Powder, Cumin, Garlic Powder, Kosher Salt, and Black Pepper.
After the spices were added to the vegetables and crushed tomatoes, I added the cooked ground chicken breast and the three types of beans. I then simmered the chili for around 4 hours while adjusting spices to my liking. Finally before serving, I shredded some smoked Gouda cheese and topped the chili with the cheese and oyster crackers.
Overall, this is one of my favorite recipes to make since it is able to feed a large group of people and there are many ways to make the chili my own. For next time, I want to add chicken thighs in addition to the chicken breast because the ground chicken kind of dried out and chicken thighs would help to add some fat into the chili.
