Recipe: Chicken & Broccoli Bake by Dr. Hazel Wallace (Pictured below)
I decided to make Chicken & Broccoli bake for my meal prepping this week, because I've figured out that I love making casserole-style dishes, since they're so easy to make and taste delicious! I followed the recipe exactly and it turned out absolutely delicious. Here is my end result:
This dish has a nice balance between vegetables, starches, dairy, and meat. That's why I figured it would be a good recipe to make for my dinners this week.

Obviously, the theme this week was wild card, so I just chose a yummy recipe from one of my cookbooks to fit that theme. Next time I make this, I will probably use one less clove of garlic, because it was a little too garlicy. I will also probably try and use a healthier substitute for potatoes (such as brown rice), because it was a little too heavy and fatty for a typical dinner for me.
One other thing I noticed was that the broccoli came out really dry after the dish was done baking. I'm not sure how to avoid this next time though, but I'll probably Google some ideas for ways to avoid this.
