Recipe Name: Tofu Bowl

Ingredients:
-extra firm tofu
-1/4 cup soy sauce
-1tbsp chili paste
-1 tbsp honey
-brown rice
-black beans
-bell peppers
-red onion
-spinach
I first started by squeezing out the water in the tofu by placing two cans on top of it for over 6 hours while I was at work. Next, I mixed soy sauce, chili paste, and honey together in a bowl. I cut up the tofu and let it sit in the bowl to let it marinade for about 45 minutes. I then put it in the oven for 25 minutes. Next, I flipped all the pieces to their other side and brushed marinade on them, and then baked it for another 20 minutes. In the meantime, I cooked my brown rice, beans, bell peppers, and red onion. Boom, finished.
Reflection:
The tofu I made for the first time turned out pretty gross, but I heard the only reason people don't like tofu is because it was made wrong, so I decided to try to make it again. This time it turned out a lot better because I let the cans sit on top of the tofu for longer, so it wasn't as soft. I enjoyed the ingredients that were in the marinade because they brought a lot of flavor to the dish. The only bad things about this dish was that it took so long to make because not only did the tofu sit out for 6 hours, but it also had to sit in the marinade for 45 minutes, and then it baked for another 45 minutes. This makes it hard to block out a time in my day to be home for the 1.5 hours. I also learned that I need to cut my tofu pieces so they're not as thin. Overall, it was really good and I'll definitely be making it more when I'm less busy!
