Shashuka: Wild Card

I had all the fixings to make Shashuka, and I wanted to see how my family would like it!
I remembered the general recipe from class, and also found ideas on pinterest on ways to add what I had in my fridge to the dish to be the most efficient.

Here's what I used:

Avocado oil
4 Large Tomatoes
5 eggs
1 Can of Great Northern White beans
half a red and half an orange bell pepper
half a yellow onion
8 medium button mushrooms
2 large cloves of garlic
1/2 cup reduced fat feta
1T smoked paprika
1T Turmeric
1T Cumin
1T dried oregano
Salt and Pepper to taste

I also made use of some bread my mother brought me from her church's "expired bread" drive, and made some rice I had in my pantry to help soften the blow for my children. One of them despises tomatoes, but he tolerated them a bit tonight.

Process:
First My son helped me chop and saute the Peppers, onion, garlic and mushrooms in about 4 Tablespoons of the Avocado oil. But the onion was too powerful and I had to take over the chopping.

Once the veggies were translucent and released their aromas, I added the spices: Paprika, cumin, turmeric and oregano. I also added the beans and chopped tomatoes and allowed them to simmer down.

As the consistency became a thicker sauce, as the ingredients came together, I cracked the eggs into a bowl individually, to make sure no shells got in, and then slid them into a slight depression I made in the top of the sauce.

I slid the whole pan into the oven and allowed it to bake at 375, for around 25 minutes until the yokes were firm. I would have liked runny yokes, but my husband doesn't enjoy them.

For the rice, I put one slice of onion into the boiling water for flavor, before I added the rice, and allowed them to cook together.
The bread i sliced into 1/4 inch slices and baked at 400 degrees for about 7 minutes on a sheet after brushing them with oil. Just long enough for them to get nice and warm, and a little toast.

Reflection:
My children each had their own feelings about this dish. My son Brian didn't enjoy the tomatoes, as expected, but he had an egg from within the sauce, and rice. Matthew(pictured), really enjoyed it, and enjoyed helping me when he could. I did explain I had to do most of it for class, but I don't think I'll get dinged for including him in food prep.

Pardon the kitchen, I swear, it's a remodel, not my everyday kitchen style.
