Chicken Afritada
Ingredients
2 chicken breasts
2 bell pepper
3 carrots
8 potatoes
1/4 onion
Water
Tomato paste
Salt
Onion powder
Garlic powder
Sugar
Pepper
Process
I started by prepping my ingredients. I cut the potatoes, bell pepper, and carrots into about 1.5 inch pieces. Then I roughly chopped the onion. After that I cut the chicken into cubes. I put the chicken into a heated pot that had some olive on the bottom. I let it cook for a few minutes then added about 2.5 cups of water to the pot and let it come to a boil. Next I added in the potatoes and carrots. I let them cook until they were starting to get soft then I added the tomato paste and all of the spices. Then I put the bell peppers and onion into the pot. I let them simmer until they were cooked.
Reflection
Chicken Afritada is a chicken stew from the Philippines. My roommate is Filipino and she cooks this recipe that her mom taught her quite frequently. She has made it so often that she doesn’t have a recipe so she just estimates most of the measurements. She was a big help and guided me along the way. Once the potatoes and carrots are cooked we added a little more water because it was getting too thick. The chicken breasts I used were pretty small so I would add more next time. The dish was served over rice.
