Wk5 Braised Vegetable Soup

This week I decided to make a braised vegetable soup. Im loosely basing my recipe off of one that I found on a website called Eat Up! Kitchen. The main differences being my recipe mainly uses different vegetables, is on a smaller scale, and simmers for a longer time. But I did draw a lot of inspiration from this recipe.

The Recipe:

Half of a chopped onion
One cup of broccoli
A fourth a cup of corn
A fourth a cup of chopped green beans
Twenty small baby carrots
Three cloves of garlic
Chopped thyme
A fourth a cup of lemon juice
half a cup of water
Three table spoons of butter
                                                                One tablespoon of oil

First I prepped all of the vegetables by cleaning drying and chopping them. Next I heated the butter and oil over a medium heat. Next I added the onions, carrots, and garlic and sautéed until they were aromatic. After that I added the beans, corn, and broccoli then the thyme. When they were cooked I finally added the water and lemon juice, then I lowered the heat to a low and simmered for a half an hour.



This was the first time that I've ever made any kind of soup from scratch by myself. It was a pretty good experience because I used ingredients that I'm familiar will and relatively confident with. I was nervous to use lemon juice instead of water, but in the end it complimented the flavors of the vegetables and spices really well. In the future I may want to start cooking with meat because at this point its something that I'm not super confident with. Id want to push myself by braising and seasoning the meat. It would be adding more depth to the flavor and protein to the recipe. Hopefully I become more confident over time and am able to do this.
