The meal that I made this week was brown rice as the whole grain, with green beans, spinach, chicken, and the sesame ginger sauce we made in week one of the cooking lab. For cooking the brown rice I used a rice cooker and set it to the brown rice setting because brown rice needs to cook slightly longer than your typical white rice.
Ingredients:
-Brown Rice
-Chicken breasts
-Green Beans
-Spinach
Sauce Ingredients:
-Ginger
-Garlic
-Soy sauce
-Tahini
-Maple syrup
-Lemon Juice
In reflection of the meal I was very happy with the final product. I first cooked the rice in the rice cooker. While the rice was cooking I pan fried the chicken. After I finished cooking the rice and chicken I briefly cooked the green beans and spinach. Once everything was finished cooking I dressed it all with the sauce that I made prior to cooking this meal. The sauce was good, but I put in the hot oil that was cooked with the grated garlic and ginger. If I had let the oil cool before adding it to the other ingredients I feel that it would have had better flavor. Overall, the meal was very good and I have plenty of left overs for the rest of the week.
