2 hard boiled eggs
a little less than a
1/4 cup of mayo
1 teaspoon of mustard
1 teaspoon of garlic powder
2 slices of toasted bread
Hard boil three eggs for ten minutes. When they are fully cooked soak them in cold water for two or three minutes and then peel the eggs. After the eggs are peeled cut them into eighths and add the mustard, mayo, and garlic powder. Then incorporate al ingredients well. Once the egg mixture is well incorporated, place the two pieces of bread in the toaster, toast until golden brown, and then put the egg salad on top.
Reflection:
This may be controversial but I really enjoy hard boiled eggs. In fact they are my favorite kind of cook eggs. I know the texture is rubbery and the smell is less than pleasant but honestly that doesn't really bother me. I love egg salad sandwiches and I frequently make them. This egg sandwich was no challenge to make, the only anxiety it produced was the age old question of, are the eggs cooked enough, but they were so everything was great!
