For this week I was looking through my refrigerator and saw we had left over taco meat from Monday night so I decided make breakfast tacos with eggs, cheese, taco meat, and onions. This was a great way to add eggs to my left overs.
Ingredients:
-Tortillas
-Ground beef taco meat
-Cheese
-Yellow Onion
-Egg
-Salsa
When thinking about eggs they can be very boring on their own so in my opinion I feel that I always need to pair them with a few ingredients. For this week as said above, I made breakfast tacos with eggs. To begin I did not use a recipe. First, I cracked and scrambled the eggs with a little bit of milk to make them a little more smooth. Then as learned in the cooking lab last week it is essential to have a hot pan so the eggs do not stick. I turned the pan onto medium high and scrambled the eggs. While the eggs were cooking I melted cheese on the tortillas. After the eggs were cooked I added them to the tortillas with onion, taco meat, and a bit of salsa. In the end, I was happy to use up some of the left overs and make a nice meal.
