QUICK GUACAMOLE EGG ROLLS
I came up with this super easy and quick recipe myself. Today I was craving for some sushi, so instead, I thought I'd cook something that looked similar. For that, I had to make the guacamole first and then make the egg base for the roll, which it's pretty much a thick, flat omelet. 
Ingredients
- 3 eggs
- 2 ripe avocados, mashed
- 1/4 tomato, cut in tiny pieces
- 1/4 red onion, cut in tiny pieces
- Lime juice to taste
- Red chili flakes
- Salt and pepper to taste
- Spicy sauce
- EVOO
Process
Cut the avocados in halves and empty them in a bowl. Mash them until they get a chunky texture. Cut the tomato and the onion and add it with the avocados. Mix it all together and season it with salt, pepper, red chili flakes and some EVOO. I also used some spicy sauce. Squeeze half a lime over the mixture and set aside. Crack the eggs in a bowl, season them and whisk until they reach a smooth consistency. In a pan, add some EVOO and heat it up at medium heat. Pour the eggs and spread them out until making a flat omelet. Wait 5 minutes until the eggs are cooked, and then flip-over for another 2 minutes. Put the flat omelet on a plate and add the guacamole, spread it out and roll the omelet, leaving the edges at the bottom of the plate. With a knife, cut the roll in small pieces and serve. Squeeze some extra lime juice if desired.
