week 6: quinoa bowl/salad


For this week's recipe I was really inspired by the flavors of the millet recipe we made in class, so I decided to recreate it but with quinoa since I wasn't a big fan of the millet's texture. I used to not like whole grains because I just had the impression that it was bland but this dish turned out to be really flavorful and tasted really healthy but satisfying so I was really happy with the results!


ingredients
- quinoa
- ground lamb
- garlic
- basil
- spinach
- lemon juice
- tomatoes
- shallot
- sweet potatoes
- salt
- pepper
- cumin
- balsamic vinegar 
- pepper

recipe
1. Add one cup of quinoa and two cups of cold water. Bring to boil then lower heat and simmer until water is absorbed. 
2. In a saucepan, sauté sliced shallots, minced garlic and ground beef. Add basil, cumin, salt, lemon juice and spinach in and cook until soft.
3. Fluff up the cooked quinoa and let it cool.
4. Mix everything together and add in sliced cherry tomatoes.





conclusion
Overall I really liked the recipe. The process was super easy and really only took about 40 minutes with the sweet potatoes. There were a lot of flavors from the cumin, basil, and tomatoes, I also roasted some sweet potatoes to eat on the side to give it a little bit more sweetness. The quinoa was a lot easier and quicker than I thought it would be to make but next time I might add some broth to it to make it more flavorful. Even though the ground lamb had lots of seasoning and flavors the quinoa was still pretty bland on its own. I would've added more basil, onion and spinach because I felt like those flavors got lost in the lamb. I usually don't cook with lamb but it was a good source of protein and had lots of unique flavors, for a vegetarian option I might change it to braised tofu next time. 10/10 would recommend this recipe to everyone!!
