Welcome party people it's Sunday and you know what that means. Final hour cooking is HEATING up the kitchen with beauty of a soup.
Recipe: Easy 30-Minute Homemade Chicken Noodle Soup
try saying 5 times fast
- 2 tablespoons olive oil
- 1 cup carrots, peeled and sliced thin (about 1 1/2 large carrots)
- 1 cup celery, sliced thin (about 2 stalks) (BOOOO, not my style im cuttin this out)
- 1 cup sweet Vidalia or yellow onion, peeled and diced small (about 1 medium onion)
- 2 garlic cloves, minced
- 64 ounces (8 cups) low-sodium chicken broth, plus more if desired
- 2 bay leaves (what is this and no)
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon dried oregano
- 1 teaspoon pepper, or to taste
- 12 ounces wide egg noodles (or your favorite noodles or pasta)
- 2 cups shredded cooked chicken
- 3 to 4 tablespoons fresh flat-leaf parsley leaves, finely chopped
- 1 tablespoon lemon juice, optional (definitely not optional)
- salt, to taste
- What we have today is a whole grain chicken noodle soup. Coming off a 3 day trip on the St. Croix I wanted to make something that I could have for the upcoming cold days. We'll start things off sauteing the carrots and onions for about 8 minutes in the olive oil. It was at this point I started cooking the unseen chicken because it was already cooking. After this I threw the garlic in to start the flavor train. With the veggies in full swing I added the broth until it was boilin hot. Pasta was the logical next step as well as a quick audible to replace celery (arguably the worst part of a chicken noodle soup) with some corn. The pasta was about ready after 10 minutes so it was time to throw in a random assortment of spices.
The results were better than I had hope for. I never really took the time to put together a sop like this. I mean sure it;s easy to boil the veggies but I've never gone that extra step to cook them first let alone add all of the spices the recipe called for. The noodles were really good as well, I'm more of a penne pasta myself so the whole grain noodles I bought were a little tricky to find but I secured a fun looking bag of the shelf. This recipe went pretty hard because it's such a simple meal and I made a bunch of lunches off 30 minutes of work. Time well spent. See ya in the next one
