Week 4: budgeting

Warm broccoli salad

For this week's assignment, I stayed simple and straightforward. I got my pantry item, fresh organic broccoli that I purchased at Trader Joe's. It didn't take a long time to make this dish. I came up with the recipe myself since I had different ingredients to use, and I must say it's very easy to make, and sometimes, the simplest things are the tastiest.
Ingredients
- 1/3 fresh organic broccoli bunch
- 1 handful heirloom tomatoes
- 2 garlic cloves
- 1 handful of mixed natural nuts (walnuts, hazelnuts, almonds)
- Red chili flakes
- Garlic powder
- 2 tbsp EVOO
- Salt and pepper
Process
I turned on the oven at 400F, and I used some aluminum foil to grill the tomatoes. Grabbed a handful of tomatoes and sprinkled them with some EVOO, garlic powder, and salt (seen in the picture). I wrapped them up and placed them in the oven for about 20-30 minutes. At the same time, I cut some broccoli pieces and boiled them for 5 minutes. It was not a long time because I wanted the broccoli to stay crunchy but wanted to eat it warm and give it some more intense color. I sliced the garlic cloves and chopped the nuts irregularly. I sauteed both the garlic and nuts with EVOO for 2 minutes. Once the broccoli was ready, I mixed the garlic mix with the broccoli and served it in a bowl. I took the tomatoes out of the oven and served them on top of the broccoli. There was some liquid from roasting the tomatoes and EVOO, so I poured that too. Finally, I added some salt, pepper, and red chili flakes.
Thoughts: it was a beautiful combination of ingredients, and nuts really gave a crunchy texture to the dish. I added some hot chilly lime sauce later, but that is optional.
