Taiwanese Minced Pork Rice Recipe
Ingredients
1 lb pork belly
2 cups of water
2 tbsp oil
mushrooms
1 small or medium-sized onion
1/3 cup Shaoxing wine
4-5 cloves of garlic chopped
2 tsp sugar
4 slices of ginger
4 Star anise
3 tbsp soy sauce
2 tbsp dark soy sauce
4 peeled hard-boiled eggs
1/2 tsp black pepper
Steps
1.
Add oil into the pot, put onions in and stir fry
it for one minute.

Put garlic into the pot and stir fry it for 30
more seconds, add mushrooms in and stir fry it for 2 minutes.
3.
Add sliced pork belly into the wok and stir fry
for additional 3 minutes.
4.
Add soy sauce, dark soy sauce, Shaoxing wine,
sugar, ginger, star anises, water into the pot.
5.
Cover the pot, simmer on low for 60 minutes.
6.
At this point, the soup will be sticky.
7.
Serve with steamed rice.
Reflection
Taiwanese Minced Pork Rice is one of the most popular dishes
in Taiwan. This is the first time I have ever make this dish, and it tastes
really good. The reason I wanted to try making this dish is that I have a
Taiwanese friend feeling homesick. I made this for my friend. I went to the
local Chinese market to buy all the ingredients, they were all cheap, and they
all work well for my food. My friend really liked the food I made, she said
although it doesn’t taste the same as the dish in Taiwan, its close enough
and it still tastes good. She said she felt better after eating the food. I am
glad she liked my food.
