Scrambled egg tacos

Ingredients:
2 whole eggs
3 egg whites
Big pinch of salt and pepper
1/2 cup of kimchi
1/2 cup of summer sausage
2 cloves of garlic
1/2 cup of cheese
1/2 teaspoon of soy sauce
5 Corn tortillas

For this week's assignment I decided to make scrambled eggs with whatever I had in my fridge. I started off by cracking 5 whole eggs into a bowl, separating 3 of them from its yolk and throwing the yolk away. Minced the garlic and diced the onions and mixed it with the eggs. I then take 1/2 cups of summer sausage and kimchi and roughly chop them before placing them into a bowl. Then I mixed all the rest of the ingredients into the bowl.

Coat the pan with olive oil, turn the stove on at medium-low once the pan is hot put the egg mixture onto the pan. Constantly stir the pan making sure the bottom of the eggs does not burn. Once it is fully cooked plate it and eat with tortillas.

I would have probably used spam instead of summer sausage in this dish. Do not know why I would, but I think would just be better.
