One thing I have realized I really enjoy making, from cooking all these weekly recipes, is casseroles. I love that you just have to throw some stuff together, toss it in the oven, and it turns out so delicious! This specific casserole took a little more time to make than some others, because I had to cook the chicken, brown rice, and vegetables all separately before putting them into the casserole dish. The extra work was worth it though, because the result is so good!

I personally think that this homemade sauce is so much better than packaged teriyaki sauce. It was exciting to realize how easy it actually is to make a good teriyaki sauce.
The brown rice is the whole grain ingredient I used for this week. I made the rookie mistake of cooking 3 cups of DRY rice, when the recipe called for 3 cups of COOKED rice. This made my casserole very rice heavy, but surprisingly enough, there was still enough sauce to cover the whole casserole. So it's wasn't too dry, but I would definitely use less rice the next time I make this.
