Scallops over Polenta



This week I gave myself a challenge to cook with what I had instead of spending a lot on unique ingredients. Over the weekend I saw a post about the best ramen in the city, so I went to try it. Next store I saw a fish market that looked interesting so I bought scallops that looked really good. I planned to use them in a pasta, but the concept this week with whole grains. This lead me to buy polenta and unite the two ingredients. It worked out really well. It was a fun dish to have in the middle of the week. I felt very fancy. 


The cooking technique this week is whole grains. I used it when I made polenta.
