Lemony Braised Chicken

Ingredients
Chicken drumsticks
1 large onion
5 tomatoes
salt
pepper
olive oil
1 tsp cinnamon
1 lemon




Process
I started by heating oil in a pot to medium-high heat. I seasoned the chicken with salt and pepper. Next I added my chicken skin side down. I cooked it until the skin was a golden brown color and then took out the chicken. I turned down the heat to medium. I sliced the onion and put in the pot. I let it cook for a few minutes before adding my tomatoes that I had cut into wedges. They cooked down for about 8 minutes. I added cinnamon to the pot. For the final step I added the chicken back in, skin side up, placed a lid on top, and turned the heat down to low.

Reflection
I had heard the term braising before, but wasn't sure what it was so I looked up the definition. I learned that it was a technique where food is fried lightly and then stewed slowly. I found a recipe from Bon Apetit that seemed delicious and somewhat simple. The recipe called for full chicken legs but all I could find at the store were drumsticks. It also had cinnamon sticks but I couldn't find those either so I used ground cinnamon. I ended up eating the finished product with some rice and squeezed a lemon on top. I thought the final product tasted ok. I think it could benefit form a few more vegetables because the tomatoes and onions become very mushy.
