Budgeting - Vegetarian Chili

Ingredients:
1 Tb olive oil
1/2 medium onion, chopped
2 bay leaves
1 ts ground cumin
1 can black beans
2 Tb dried oregano
1 Tb salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
1/4 cup chili powder
1 Tb ground black pepper
1 can kidney beans, drained
1 can garbanzo beans, drained
1 can whole kernel corn
2 cans chopped green chili peppers, drained
2 packages (12 oz) vegetarian burger crumble
3 cans whole peeled tomatoes, crushed

Directions:
1. Pour 1 Tb olive oil in crock pot.
2. Chop up onion, peppers, celery, and jalapeno peppers.
3. Add these and all cans and spices to crock pot. Stir and cook on high.

Reflection:
There was a lot of chopping involved in this one. I made a number of changes to the original recipe. First of all, it was late and I just decided to add everything to a crock pot. I didn't have garlic cloves so I used garlic powder instead. I also forgot to drain the cans of beans so that may affect the taste. I didn't have vegetarian burger crumbles either but it seems like there's plenty of protein from the beans. Finally, rather than using cans of tomatoes, I just chopped roma tomatoes into fourths. I got the black beans as the pantry item from Target.
