Reflection:
This dish I first eat was cooked by my boyfriend. He made this with pork but I prefer beef. So I use beef instead of pork. Eggplant and potatoes do not have a strong flavor. These three ingredient's flavor won't conflict with each other. I usually cook potatoes stew with beef or potatoes stew with eggplant. It depends on the price in the market. This dish is spending time. The eggplant need a long time to get soft and after put into the pot, the potatoes also need time.
