For this assignment I decided to try to emulate Qdoba's breakfast tacos. I did not have a recipe to go off of I was just improvising with ingredients I already had at home.
Ingredients
- 2 potatoes
- 1/2 white onion
- vegetable oil
- salt and pepper
- 1 dozen eggs
- tortillas
- shredded cheese
- salsa
ProcessI began by cubing the potatoes and dicing the onion so I could fry them together while I prepared the other ingredients. While the vegetables were frying in an oiled skillet, I scrambled the eggs. I decided to just use a whole dozen so I would have leftovers. Once the potatoes and onions had a nice golden brown color I salted and peppered them and removed them from the skillet. I then poured the scrambled eggs into the re-oiled skillet so I could cook them. When the eggs were done cooking I salted and peppered them and then added a little bit of shredded cheese.
I then put the prepared ingredients onto the taco tortillas and enjoyed.

While these were very tasty, overall they felt a little incomplete and could be bettered the next time around. First of all the potatoes were under seasoned and could at the very least have used a little more salt, and at the most done with some taco seasoning or chili powder. I'd I was shopping specifically for this recipe I would have gotten a red onion to fry with the potatoes, but I was using what I had which was a white onion. I also may experiment with the eggs next time I do this, perhaps remove some of the yolk or some of the white; I am not sure what either of those would do to the texture but something about the eggs was not quite right. Additionally I would love to do this recipe again but also have some bell pepper to make fajitas with. Finally there were some simple prep issues that with a little bit or foresight I could have prevented. I had been storing the tortillas and the salsa in my pantry so they were both room temperature; the meal definitely would have been better had I warmed the tortillas and cooled the salsa prior to preparation. All of that being said this meal was very tasty for something I whipped up without buying any special ingredients.
