Braised Vegetables with Brown Rice

Ingredients:
-1/2 red onion
-1/2 garlic
-carrots
-mushrooms
-edamame
-tofu
-olive oil
-brown rice
-corn

Process: I didn't follow the exact recipe and added my own amounts of vegetables. I first started by preparing tofu with olive oil, sesame sauce, and garlic and roasted in the oven. Next, I braised my vegetables (carrots, mushrooms, red onions) in olive oil with some lemon and garlic. As that was happening, I cooked my corn and brown rice and boiled my edamame.

Technique: I included the weekly technique by braising my vegetables.

Comments: Honestly, probably not the best meal I made. It was my first time braising and making tofu so it was a little stressful doing both at the same time. Olive oil wasn't my first choice to use for braising, but I unfortunately didn't have any other ingredients to cook with. Since this was my first time making tofu, I definitely forgot to squeeze out the water in it so it wasn't the best texture. I ended up switching out the tofu for an over easy egg so I still got protein in my meal. Overall, the meal was still tasty and filling. I'm happy that I learned what braising was so I can expand my cooking knowledge and am excited to try it again when I have the right ingredients!
