Braised Tilapia

I had some tilapia I wanted to use for this weeks cooking assignment and then I saw that we were supposed to incorporate braising into our project. I had never braised fish before and wasn't even sure it was a good idea, but after some googling I found this recipe: https://www.tasteofhome.com/recipes/savory-tomato-braised-tilapia/ I did not follow the recipe really at all, I more just used it as a guideline.
Ingredients:
- 2 tilapia fillets
- olive oil
- 1 can tomato sauce
- salt
- pepper
- garlic powder
- rice (to serve with, optional)
Process
I began by getting some rice cooking while I waited for my fillets to thaw slightly and for my pan to heat up. Once the skillet was hot (I got it very hot because I was only going to sear the fillets on each side for a short time) I pul a layer of olive oil on the pan and put the fillets onto the heat for about a minute on each side, just to give them a light fry. Once the fillets were fried I lowered the heat of the stove and poured the tomato sauce over them and then covered it so it could cook slowly.

After simmering over the low heat for about 10 minutes, I removed it from the heat, put the fillets on a bed of rice, and then poured some of the sauce over it and enjoyed.

Takeaways
Overall I was extremely pleased with how this recipe turned out. The flavors were actually super delicious, I was surprised at how well the fish and tomato went together. I got the seasonings just right, but in the future some hot sauce could be a welcomed addition to this recipe. Usually when I just pan fry the tilapia fillets they can get kind of dry, but the braising in the sauce helped it stay nice and moist, but still as little bit flaky. If I had to complain about one thing it would be the texture. As I was eating it and everything was getting mixed together it sort of just became a homogenized mush. I think if I had followed the recipe more precisely and had fresh vegetables in there in addition to the tomato sauce there might have been just enough crunch to balance it out. As I said before though I am super proud of how good this was and I will definitely be using braising to prepare tilapia more often.
