Braised Chicken with Root Vegetables

Overall, I thought this recipe was pretty easy to make. I have never braised anything before, so it was fun to step out of my comfort zone and try something new (I had to braise the chicken). I followed the recipe exactly, except the store I went to didn't have parsnips, so I used rainbow carrots instead. This was exciting to me because I've never worked with colored carrots before.

This was also the first thing I made that had to be in the oven for 2+ hours. When I took it out, the carrots were still pretty tough, so I stuck it back in for another half hour, and that did the trick. If I were to change anything, I would add more salt and seasoning the next time I make it. It didn't taste bad, but it was just a little bland.
