Basic Fried Brown Rice




For this weeks assignment I went with a basic fried rice recipe that I use at home regularity, but I managed to overcook the rice. The ingredients are very simple, but this time I didn't include a protein except the egg, usually I include bacon or chicken.

Here are the ingredients:
2 Cups cooked Brown Rice ( I cooked this rice the same day, but used it in this recipe)
1 cup small chopped onion
2T Sesame Oil
2T Soy Sauce
2 whole eggs
1 cup corn from cob
2 minced garlic cloves
3 chives chopped fine for garnish
1 basil leaf for garnish
Salt and pepper to taste

To cook the rice, I put 4 cups of water into a medium saucepan on high heat. Once it was boiling I added the rice and reduced the heat so the rice was simmering, I covered it and let it simmer until the rice was tender and I poured of the small amount of water left by draining the rice.

In a Wok, I heated the avocado oil and sauteed the onions until translucent, and added the garlic for a quick sautee, Once the aromas were released from the garlic, I added the rice and let it heat and brown a bit, this took about 3-4 minutes, not long.

I cleared a small circle in the rice at the bottom of the wok and added a little more oil and cracked both egg to add and scramble in the middle. as they cooked I stirred in the cooking rice to incorporate them into the rice more completely. Once the eggs were cooked, I added the corn cut from the cob to heat and served it hot, garnished with chopped chives and a basil leaf for fragrance.

The rice was a little mushier than I anticipated, I think because i used advice to cook in more water than needed and I left it too long. Otherwise the dish was tasty and my whole family enjoyed it for dinner.
