Recipe: Attieke aux Poissons (Fermented and grated Cassava with Fish)

- Attieke
: 300g of fermented and grated Cassava (found in an Asian store, Brooklyn park)
- Salmon: 1 fillet (0.98lb)
- Smoked Sausage: 3
- Knor:
Chicken flavor Bouillon
- Tomatoes: 3
- Onions : 1
- Epices
Melange: Mixture of spices (garlic, ginger, green anise,
coriander, pepper, nutmeg)
- Red pepper.
- ½ cup of water.
Procedure:
Step 1: Salmon seasoning

Cut the Salmon in 3 parts.

Mix 2 teaspoon of the Chicken flavor Bouillon
with 2 tables spoon in a small jar and apply the mixture to the pieces of
Salmon.

Let the fish marinate for 15 to 20 minutes
Step 2: Dicing Onions, sausages and tomatoes to make the sauce
In this step we are going to incorporate the dicing Technic we learned in class. The process of dicing
the onions, sausages and tomatoes consists in cutting them longitudinally and then in the
width direction, so we can obtain these products in small Ds as shown on the
picture 2.
To make the sauce it is
essential to start by frying the onions in a first part for 5 minutes, before
adding the dicing tomatoes, sausages and the 3 spices (Chicken flavor Bouillon, Mixture
of spices, and the red pepper). You need to do that because the dicing onions take
more time to cook. The cooking time for the tomatoes lasts 3 minutes. It is important
to point out that you need to stir continuously and delicately while cooking
the dicing onions and tomatoes
Step 3:
Fry the 3 pieces of Salmon with 3 teaspoon of coconut oil (concentrate, NOT
liquid)
Step 4: Cooking the Attieke
Put the 300g of Attieke in a glass container and mix it
with 1 teaspoon of Knor (Chicken
flavor Bouillon) and ½ cup of water. Then put the mixture in the microwave for
2 minutes, mixt it, and put it back in the microwave for two more minutes.
Conclusion
For this recipe, everything
worked well as you can see on picture 3. However, the tomatoes where a little overcooked.
Next time I should try to reduce their cooking time to 2 minutes.
