This week was a really busy week for me so I didn't want to cook anything that was too complicated, required too much time or washing too many dishes. I made guacamole with sliced bell peppers to dip in because it's light and easy to make.
Ingredients
- 2 avocados
- 1 orange bell pepper
- 1 yellow bell pepper
- 1 tomato
- half of an red onion
- 1 clove of garlic
- lime juice
- salt and pepper
Recipe
1. Mash avocados in a bowl
2. Add salt, pepper and lime juice into the bowl with the avocados
3. Dice tomatoes and onions, then mix into the bowl gently
4. Slice bell peppers
5. Plate and enjoy!
I used this week's technique, slicing, by slicing onions and tomatoes before dicing them and slicing bell peppers so I can use them to scoop up guacamole. This was a pretty simple recipe so it wasn't too technical and didn't have a lot of space for errors. I think I did an ok job but it could've been seasoned better, which I think is from me not really measuring my condiments and just eyeballing it. I think using bell peppers as a substitute for chips is definitely a lighter option and it adds a sweetness to the overall taste and quality, but I feel like it isn't as satisfying as chips. As a meal it also didn't have any grains so it's definitely more of a snacking food but I eat it as a meal when I'm busy so it works!
