Sushi Bowls

This week I decided to make sushi bowls because they are cheap, filling and tend to make quite a few meals from leftovers. At one point I made this meal using a recipe, however I've started just to prepare it from memory and taste.



To incorporate the weekly skill of dicing, I diced both the cucumbers as well as the avocado. In order to dice the cucumber I first cut it into coins and then in thirds, and finally in half. For the avocado, I cut the avocado first in half and then the long way and then ended cutting it the short way. I cut it inside the skin to make the process easier.



Reflecting on the meal, I think it all came together quite nicely. My younger sister came over for dinner and had requested this and eating as a family always makes a meal taste better. One new thing that I tried this time was using canned salmon rather than pan searing it myself. This made the meal significantly cheaper, however I prefer having the fresh salmon. Conversely, the salmon from the can left the bones in (which were edible) thus improving the amount of calcium that the meal provided. I typically don't consume a ton of dairy products and having the extra calcium in a form that is readily bioavailable was a nice addition! Overall, I was quite happy with this new twist on the recipe, but was bummed when I finished eating and realized that while I remembered to add avocado to my sister's dish, I forgot to add that and black sesame seeds to my own!
