Stop Top Chicken + Salad and Dressing
1.
Gather all the ingredients: chicken thighs, butter, onion powder, garlic powder, pepper, paprika, salt, olive oil, onion, spring mix salad, and white wine. For this recipe, I modified some of the steps and ingredients to accommodate what I had available.
3. Dice the onion that will be used in the pan and the salad.
4. Put oil in (just enough to cover pan) and place seasoned chicken in. Cook for about 5 minutes and then flip to cook for 6 minutes. Add butter and half of diced onions, then cook for about 30 seconds. Then, add 1/2 cup white wine and scrape/mix everything together. After cooking for one more minute. Remove chicken from pan.
5 Mix together 1 tablespoon olive oil and 1 tablespoon balsamic vinegar. Add 1/2 teaspoon honey and a pinch salt. Pour over spring mix salad and add rest of diced onions. Enjoy!
In this recipe, I incorporated dicing by adding onions into the pan and the salad. I think that it worked well for the salad, however they were the substitution in the pan for garlic. I did not have garlic, and I think that could have added better flavor. Nonetheless, I really enjoyed that the chicken was very juicy on the inside and crisp with seasoning on the outside. I think the only other thing I would change is that I could have added more ingredients to the dressing since it tasted a little plain.
